Cabo Taco has teamed up with San Diego based craft brewery Karl Strauss to bring you a night of Baja style cuisine and local craft beer. We love the beach and surf theme that Karl Strauss uses for their products so we thought it would be a great idea to incorporate some Baja California favorites to the menu for this month’s beer dinner. We will start off light with a wonderful ceviche paired with Berliner Weise; the fresh citrus flavor of the fish will match up perfectly with the tart flavor of this retro style wheat beer. Next up is an Ensenada style fish taco paired with an Amber Lager similar to the Vienna style lagers produced in Mexico. Take a stroll further north and you end up in Puerto Nuevo where the lobster is always on the menu. We have prepared a Slipper Lobster Taco sautéed in a butter garlic sauce and paired it with Pin Tail Pale Ale to allow the hop bite of the pale ale to balance out the richness of the lobster. Finishing off the dinner with Coconut Flan paired with Boardwalk Black Rye Ale. The sweet caramel custard balances out beautifully with the deep roasted coffee and dark chocolate flavors of the black rye ale.
